咖喱鸡配渔网煎饼 Chicken Curry with Roti Jala

烟霾侵袭槟城已经有一个多礼拜了。
幸好,老天爷很眷顾我们,这几天连续下了几场雨。
虽然下的是蒙蒙细雨,但最后也总算还我们一片晴天,一抹清新的空气~

上个礼拜的我还在呱呱叫,埋怨说天气实在是太热了。
刚冲好凉出来没多久又大汗淋漓了。
这个礼拜,天气就来个180度转变。
打开窗户,迎来的不再是让人窒息的烟雾,而是凉风习习,甚至让我感觉到很冷。
冷得让我在不用开风扇的情况下,还穿上袜子,暖一暖脚丫子~
真希望这样的天气一直持续下去。。

我爹每当在雨天,就会叫我娘煮咖喱。
而他女儿也一样,在这凉凉的天气下,也想要来一碗热辣辣的咖喱。
于是,今天决定来个多多马铃薯的咖喱鸡。。
也顺道尝试我第一次的渔网煎饼。

我长这么大,都没有吃过渔网煎饼。
只知道我大姐之前说过她很喜欢吃,每当有pasar ramadhan时,她都会买来吃。
第一次做渔网煎饼,亦是我第一次吃渔网煎饼。
刚开始煎时,我的渔网真的很不明显。
但慢慢地,越煎越得心应手,渔网也越来越好看了。。

渔网煎饼配咖喱鸡,真是绝配!
我不知不觉,就吃了10片。。呵呵。。
花了两个小时来准备的一餐,真是值得~

渔网煎饼食谱参考:小雨伞的天空(我做了少许更动)

渔网煎饼材料(约20片):
普通面粉                            220g
黄姜粉                                1tsp
盐                                          1tsp
水或牛奶                            250ml
植物油或溶化牛油         2tbsp
鸡蛋                                     2个

做法:
  1. 将全部材料混合均匀后,过筛。
  2. 将过筛后的面糊放一旁,静置约20分钟。
  3. 准备一个不沾平底锅,以小火烧热后抹少许油。
  4. 将面糊倒入模具中,并以转圆圈的模式让其成一网状圆饼,煎约30秒或至熟,即可取出卷起或折起。
备注:
面糊应该要比较稀才可以,要不然,面糊会比较难流过模具。

咖喱鸡材料(4人份):
琵琶鸡腿            4个
马铃薯                4个
咖喱酱料包       1包
咖喱叶                1支
蒜头                    2瓣
植物油                少许
清水                    适量
盐      适量

做法:
  1. 琵琶鸡腿放入沸水汆烫后取出,洗净备用。
  2. 马铃薯去皮,切成滚刀状;蒜头切片;咖喱叶洗净备用。
  3. 取一锅,放入少许油,爆香蒜头,咖喱叶和咖喱酱料后,加入马铃薯和鸡肉稍微翻炒一下。
  4. 加入适量的清水,以大火煮滚后,转中小火继续煮约40分钟。
  5. 最后,加入盐调味即可。


Ingredients for Roti jala(Approx. 20pcs):
All purpose flour                         220 g
Turmeric powder                         1 tsp
Salt                                                  1 tsp
Water or milk                              250 ml
Vegetable oil or melted butter  2 tbsp
Eggs                                                2 nos

Method:
  1. Mix all the ingredients together and sieve it.
  2. Put the sifted batter aside for approx. 20 minutes.
  3. Get ready a non-stick pan, heat over low heat and rub some oil on it.
  4. Pour the batter into the roti jala mould, move the mould in circular motion to form a round net-like shape. Pan-fry for approx. 30 sec or til cooked. Remove and roll or fold it.
Note:
The batter should be runny so that it will be able to pass through the holes on the mould easily.

Ingredients for Chicken curry(4 servings):
Chicken drumstick           4 pcs
Potato                                 4 nos
Curry paste                        1 packet
Curry leaves                      1 stalk
Garlic                                  2 cloves
Vegetable oil                      Some
Water                                  Some
Salt                                       Some

Method:
  1. Blanch the drumsticks in boiling water, remove and rinse.
  2. Remove the skin of potatoes, cut them into chunks; slice the garlic; rinse the curry leaves.
  3. Heat a pot, put some oil into the pot and sautee the garlic slices, curry leaves and curry paste. Then, add in the potatoes and chicken drumsticks and stir-fry for a while.
  4. Add some water, heat it over high heat til boiling, turn into medium-low heat and continue to cook for approx. 40 minutes.
  5. Lastly, add some salt to taste. Ready to serve.

煎了几片后,有比较好了。。
This is what i managed to get after a few trials..slightly improved!

终于,我的‘渔网’比较明显了哦。。
Finally, my 'net' looks much better now..

    I have tried making roti jala using Aus Masterchef, Poh's recipe but can't make a proper net!!! Ai ya! I think I have to keep trying :p

  3. Hi Cat, I've made something like roti jala before many years ago but I remembered it was green in colour and sweet. I love making the net, very pretty and fun! (: Thank you for sharing your curry chicken recipe! Curry chicken is really a comfort food for cold days!
