之前买了多利鱼,想说以后想吃鱼粥时,随手就可以有材料煮了。
直到前几天,在网上看到说多利鱼不适合用来煮鱼粥。
好像说会腥还是容易烂什么的。。正确的原因我真的忘了。
既然不适合用来煮鱼粥,那我就弄个鱼扒薯条吧!
由于不想买一大包的薯条碍着冰箱的位子,所以我就自己动手做了一些。
炸得香脆的鱼扒和薯条,配上塔塔酱,好味~
我的鱼扒被炸得有点黑,因为我一边炸鱼,一边清洗碗碟,结果一不留神就炸过头了。
如果鱼扒没被炸得那么黑,那它就可以算是色。香。味。俱全了。。
呵呵~
鱼扒材料(1人份):
多利鱼片 1片
鱼片腌料:
黑胡椒粉
盐
意大利香料
面糊:
普通面粉 1/2 碗
泡打粉 1/2tsp
苏打粉 1/4tsp
水 适量
做法:
- 鱼片洗净后,用厨房纸巾抹干,再用腌料腌制半小时以上。
- 另一边厢,将面糊里的粉类混合均匀,再加入适量的水,搅拌成浓稠细滑的面糊。(水一点一点地加,免得面糊变得太稀)
- 将鱼片取出,沾上干面粉后再沾上面糊。
- 热锅下油,以中小火将鱼片炸至双面呈金黄色,即可取出。
薯条材料:
马铃薯 1颗
玉米淀粉 适量
调味料:
黑胡椒粉
盐
做法:
Ingredients for battered fish(Single serving):
Dory fish fillet 1 slice
Marinade:
Black pepper powder
Salt
Italian mixed herbs
Batter:
All-purpose flour 1/2 bowl
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Water Some
Method:
- Rinse the fish fillet, pat dry with kitchen towel and marinade for at least half an hour.
- Meanwhile, mix the flour, baking powder and baking soda together. Then, add some water and stir til a smooth and thick batter is formed. (Add the water bit by bit so that the batter will not turn to be too watery)
- Coat both sides of the fillet with some flour, then, coat with the batter.
- Heat some oil and fry the fillet til both sides turn to be golden brown in color. Remove and set aside.
Ingredients for fries:
Potato 1 nos
Corn starch Some
Seasonings:
Black pepper powder
Salt
Method:
- Remove the skin of potato, then, cut it into strips. Put them into a pot of boiling water and cook for approx. 2 minutes. Drain and let them dry on a plate.
- Keep them into frozen compartment for approx. an hour.
- Coat them with some corn starch and fry til golden brown in color.

我很怕炸鱼的原因就是这样。。呵呵。。幸好这个面糊蛮好用的。。
