亚参咖喱猪肉 Assam (Tamarind) Curry Pork

不久前买了亚参膏回家,就是等着时机煮亚参菜肴。
终于,时机到了!
眼见冰箱剩下几根羊角豆,半根茄子,两颗番茄,一小包肉片,正好可以来一道《亚参咖喱猪肉》。
这道菜酸酸辣辣,真的很下饭!
这一锅吃到最后,滴汁不剩。
材料:
猪肉片- 250g
带籽亚参膏- 2 汤匙
清水- 200ml
洋葱- 半颗(切块)
蒜茸- 2汤匙
咖喱酱- 3汤匙
番茄- 2个(切块)
羊角豆- 6根(切段)
茄子- 半根(切段)
香茅- 1根(取白色部分和敲扁)
椰浆- 200ml

腌料:
酱油- 1汤匙

调味料:
白糖- 1/2汤匙
盐- 1/2 茶匙

做法:
1. 将猪肉片用腌料腌约15分钟。
2. 亚参膏加入清水,搅拌均匀后,把籽取出。
3. 热锅下油,爆香洋葱,蒜蓉和香茅后,加入咖喱酱炒香。
4. 加入猪肉片,炒至肉片变色。
5. 倒入亚参水,加入番茄,煮至番茄变软。
6. 加入羊角豆和茄子,煮至熟。
7. 倒入椰浆煮至微微沸腾后,加入糖和盐调味即可。

备注:
嗜辣者可以放1-2根指天椒。
Ingredients:
Pork slices- 250 g
Tamarind paste (with seed)- 2 Tbsp
Water- 200 ml
Onion- 1/2 nos(Cut into chunk)
Chopped garlic- 2 Tbsp
Curry paste- 3 Tbsp
Tomato- 2 nos(Cut into chunk)
Okra- 6 nos(Cut into sections)
Eggplant- 1/2 nos(Cut into strips)
Lemongrass- 1 stalk(Take the white portion and bruise lightly)
Coconut milk- 200 ml

Marinade:
Soy sauce- 1 Tbsp

Seasoning:
Sugar- 1/2 Tbsp
Salt- 1/2 tsp

Method:
1. Marinate the pork slices for approx. 15 min.
2. Stir the tamarind paste with water, then, remove the seeds from the juice.
3. Heat a cooking pot with oil, saute the onion, garlic and lemongrass. Then, add in the curry paste and stir until fragrant.
4. Add in the pork slices and stir fry until its color changes.
5. Pour the tamarind juice into the pot, add in tomatoes and cook until the tomatoes soften.
6. Add in the okra and eggplant, cook until they are cooked.
7. Pour the coconut milk in and bring to gentle boil. Season with sugar and salt according to taste. Ready to serve.

Note:
You may add 1-2 nos of bird's eye chilies if you prefer spicier taste.
