二话不说就买了。
但,得空的时候没看见泰国茄子和豌豆茄子。
当看到泰国茄子和豌豆茄子时,却忙着课业,没有闲情煮。
终于,把功课交了给教授。
终于,可以有自己的时间享受厨房乐了。
终于,在得空的时候买到了泰国茄子和豌豆茄子。
终于,有了我人生第一次的《泰式青咖喱鸡》。
煮了3-4人份的青咖喱鸡,白饭也煮了一大锅。
我和另一位屋友,两人就解决掉了。

这道《泰式青咖喱鸡 》,我个人觉得味道不辣,屋友却觉得有像咖喱那样辣。
所以,大家请自行斟酌吧。
材料(3-4人份):
鸡肉 250 g泰国茄子 350 g(约8个)(切滚刀状)
豌豆茄子 70 g(约4束)
马铃薯 1个(切滚刀状)
青咖喱酱 50 g(2 tbsps)
椰浆 400 ml
清水 130 ml
疯柑叶 4片(可加可不加)
红辣椒 1根(切片)
九层塔 1把
植物油 2 tbsps
调味料:
鱼露 1 tsp
白糖 1 tsp
盐 1/2 tsp
做法:
- 热油下锅,爆香青咖喱酱,疯柑叶和红辣椒 。
- 加入鸡肉块,翻炒至半熟。
- 加入马铃薯,茄子和豌豆茄子,翻炒片刻。
- 加入椰浆,煮至沸腾。
- 如果觉得椰浆太浓稠,可以酌量加入清水。
- 加入九层塔。
- 以中小火煮约20分钟或至马铃薯变软。
- 最后,加入鱼露,白糖和盐调味即可。
备注:
- 我觉得只放椰浆会太浓,太腻了。所以,我酌量加入清水。
- 不嗜辣者可不放红辣椒。

Thai eggplant 350 g(approx. 8 nos)(Cut into chunks)
Pea eggplant 70 g(approx. 4 bunches)
Potato 1个(Cut into chunks)
Green curry paste 50 g(2 tbsps)
Coconut milk 400 ml
Water 130 ml
Kaffir lime leaves 4片(Optional)
Red chilli 1nos(Cut into slices)
Thai basil leaves 1 handful
Vegetable oil 2 tbsps
Seasoning:
Fish sauce 1 tsp
Sugar 1 tsp
Salt 1/2 tsp
Methods:
Thai eggplant 350 g(approx. 8 nos)(Cut into chunks)

Coconut milk 400 ml
Water 130 ml
Kaffir lime leaves 4片(Optional)
Red chilli 1nos(Cut into slices)
Thai basil leaves 1 handful
Vegetable oil 2 tbsps
Seasoning:
Fish sauce 1 tsp
Sugar 1 tsp
Salt 1/2 tsp
Methods:
- Heat a pan with some oil, sauté the green curry paste, kaffir lime leaves and red chilli.
- Add in chicken, stir-fry til half-cooked.
- Add in potato, eggplant and pea eggplant, stir-fry for a while.
- Add in coconut milk, bring it to boil.
- If you feel that the coconut milk is too thick, add in some water accordingly.
- Add in Thai basil leaves.
- Cook over medium low heat for approx. 20 mins or til the potatoes are fully cooked.
- Lastly, add in fish sauce, sugar and salt to taste. Ready to serve.
Remark:
- I found that the curry is too thick if only coconut milk is added. Hence, I add in some water accordingly to adjust the thickness.
- Those who cannot take food that is too spicy may just omit the red chilli.
