这几天不知道是因为阴霾来袭,或是什么原因,就只想吃清粥。
原本想煮个白粥配我爹给我的橄榄菜,但是记起冰箱里还剩一些蛤蜊。
于是,把粥品升级,来份《蛤蜊姜丝粥》吧!
由于临时想煮粥,没有预先冰一些米。
于是,唯有用最传统的方法煮粥咯。
花了一些时间慢煮,虽然离我心目中在香港吃到绵密的粥还有些距离,但我还是觉得很开心,因为有进步了。
这次用了新买的小砂锅煮粥,因为顺道利用米浆把砂眼封住。
据说这样做,砂锅会比较耐用。
材料(1-2人份):
白米 1杯
蛤蜊 8个
姜丝 1+1 tbsp(装饰)
植物油 1/2 tbsp
盐 适量
清水 8杯
白胡椒粉 少许
做法:
- 蛤蜊预先泡盐水让其吐沙,洗净,备用。
- 把白米洗净后,泡在水里,冷藏约30分钟后沥干,备用。
- 把水煮至沸腾后,把米,1 tbsp姜丝和油倒入砂锅里,盖上锅盖,大火煮至沸腾。
- 转中小火,继续煮20分钟。
- 掀起锅盖,一边煮,一边不停搅拌15分钟至粘稠。
- 另煮一锅水至沸腾,熄火,放入蛤蜊烫约30秒,取出。
- 把蛤蜊放入粥底,用盐调味,稍煮片刻。
- 食用前,放入姜丝做装饰并加入少许白胡椒粉即可。
备注:
- 一定要用热水煮粥,不然粥会黏锅底。
- 加一些油在粥里,可以让煮出来的粥比较滑。
- 先煮好粥底,再加其它的配料。
Ingredients(1-2 servings):
Rice 1 cup
Clam 8 nos
Shredded ginger 1+1 tbsp(Deco)
Vegetable oil 1/2 tbsp
Salt Add to taste
Water 8 cups
White pepper powder Some
Method:
- Soak clams in salt water to eliminate the sand, rinse and set aside.
- Rinse the rice, soak in water, refrigerate for approx. 30 mins, drain and set aside.
- Bring the water to boil, put the rice, 1 tbsp of ginger and oil into the casserole, close the lid and bring to boil again over high heat.
- Lower the heat to medium low heat, continue to cook for 20 mins.
- Remove the lid, keep stirring the porridge for approx. 15 mins to obtain a thicker consistency.
- Bring another pot of water to boil, off the heat, blanch the clams for approx. 30 secs and remove from the water.
- Put the clams into the porridge, add some salt to taste and cook for another while.
- Put on the shredded ginger for garnishing purpose and sprinkle some white pepper powder before serving.
Note:
- Must use hot water to cook porridge to prevent the rice from sticking at the bottom of the casserole.
- The purpose of adding oil is to obtain porridge with a smoother texture.
- It is advisable to first prepare the plain porridge as a base then only adding the other associating ingredients.
