桑椹果酱 Mulberry Jam

上个礼拜回家,我娘告诉我说她的一位朋友给了我们一袋桑椹,要我‘解决’掉它。
之前做过桑椹冰沙,酸酸甜甜地,好好喝。
这次,看着有蛮多桑椹的,拿来做果酱就最好了。

选了这个食谱,因为材料简单,不需要用麦芽糖,吉利丁等。
而且,作者还教了我们如何在准备果酱时,取桑椹果汁。
我娘用了桑椹果汁泡水喝,她说很好喝,好像喝Ribena那样。呵呵。。

作者没有将桑椹打烂,但我觉得整颗桑椹涂在土司上吃,没有果酱的感觉。
于是,我将桑椹用果汁机将桑椹打烂,才装入罐中。

食谱参考:省钱女

材料:(约150g果酱)
桑椹            300g
砂糖            150g
柠檬汁        2tbsp (约1颗)

做法:
  1. 将桑椹洗净,沥干,放入锅中。
  2. 加入砂糖和柠檬汁,混和均匀后,静置约20分钟。
  3. 开小火煮,偶尔搅拌。
  4. 在煮的过程中,桑椹会出水,成了浓缩桑椹果汁。我们可以舀出适量的果汁,放凉后装入瓶子,日后加水冲泡成桑椹果汁喝。
  5. 继续煮,直到果汁收干成浓稠状即可熄火,让其待凉。
  6. 将桑椹果酱用果汁机打烂成泥,即可装入干净的瓶子冷藏。
备注:
  1. 由于自制的果酱没有添加任何防腐剂,所以请尽快将果酱食用完毕,以免变质。
  2. 除了涂土司之外,桑椹果酱也可以用来冲泡成桑椹果汁喝,或者加入原味优格成为桑椹优格。
Ingredients:(Approx. 150g
Mulberry        300g
Sugar              150g
Lemon juice   2tbsp (Approx. 1 nos)

Method:
  1. Rinse the mulberries, drain and place into a pot.
  2. Add in sugar and lemon juice, mix thoroughly and set aside for approximately 20 minutes.
  3. Cook at low heat and stir occasionally.
  4. During the cooking process, the mulberry will release its juice and form concentrated mulberry juice. We can scoop some of the juice, let cool and keep in a bottle for future use to prepare mulberry drinks.
  5. Continue to cook until a concentrated mixture is obtained. Set aside to let cool.
  6. Blend the mixture to form puree. Then, keep the jam in a clean bottle and refrigerate.
Note:
  1. Since there is no preservative added in this homemade mulberry jam, it is better to finish it as soon as possible to prevent quality deterioration.
  2. Besides using it as spread, this mulberry jam can be used to prepare mulberry juice or added into plain yogurt to form mulberry yogurt.
