蒸湿润巧克力蛋糕 Steamed Moist Chocolate Cake

一个月没有回家了。。昨天回到家,吃饱饭,手就开始痒了。。
来吧!来个我想做很久了的‘蒸湿润巧克力蛋糕 ’。。

不知道为什么,淋上可可酱的蛋糕表面一点都不光滑,起了一点一点的颗粒。。有些小失望!将蛋糕放入冰箱冷藏一夜后,今天终于切开来吃了!

还好,虽然外表并不完美,但蛋糕却是好吃的!真的很湿润!吃了一片后,真的觉得很‘巧克力’~我不是那么喜欢吃巧克力,我也觉得好吃。。那喜欢吃巧克力的人,一定会喜欢这款蛋糕。

食谱参考:ann ann

蛋糕体材料 (8寸圆模):
A:
牛油                   180g
细糖                   180g (我用150g)
淡奶                   200g
香草精               1/2tsp
     
B:
全蛋                   2个

C:
中筋面粉           100g
可可粉               50g
发粉                   1/2tsp
苏打粉               1/2tsp

做法:
  1. 将材料A放入锅内,以小火煮至融化后,离火待用。
  2. 等(1)稍微凉后,分次加入B料,搅拌均匀。
  3. 把C料过筛后,将(2)倒入,搅拌均匀至面糊呈稀状。
  4. 于圆模涂上一层油后,倒入面糊,并盖上一张锡纸后,放入蒸炉中以中火蒸45分钟。
  5. 将蛋糕取出,待冷却后才将蛋糕倒出。
可可酱材料:
炼奶                200g
玉米油            2tbsp
可可粉            20g
香草精            1/2tsp
盐                    1/8tsp

做法:
  1. 把炼奶,玉米油和可可粉搅拌均匀,再以小火煮至稍微浓稠。
  2. 加入香草精和盐,混合均匀。
  3. 待可可酱稍微冷却后,倒在蛋糕上即可。
Cake (8" round baking pan):
A:
Butter                     180g
Castor sugar           180g (I used 150g)
Evaporated milk     200g
Vanilla essence       1/2tsp
     
B:
Whole egg              2 nos

C:
All-purpose flour    100g
Cocoa powder       50g
Baking powder       1/2tsp
Baking soda           1/2tsp

Method:
  1. Heat (A) with low heat until melted, set aside to cool.
  2. Once (1) has cooled down, add in (B) in a few times and stir until well-combined.
  3. After sifting (C), add in (2) and stir until it forms watery batter.
  4. Brush some oil in the baking pan, pour in the batter and cover it with a piece of aluminium foil. Steam it under medium heat for 45 minutes.
  5. Remove the baking pan and set aside. Remove the cake from the pan only when the cake has cooled down.
Cocoa topping:
Condensed milk      200g
Corn oil                  2tbsp
Cocoa powder       20g
Vanilla essence       1/2tsp
Salt                        1/8tsp

Method:
  1. Mix condensed milk, corn oil and cocoa powder together, heat them under low heat until a more concentrated liquid is obtained.
  2. Add in vanilla essence and salt, stir well.
  3. Once the cocoa topping has cooled down a little bit, pour on the cake.

  2. hi cat! not sure why the lumpy ganache but i've never tried with cocoa powder before. anyway, taste is more important and you did it! I really enjoy looking at all the choc cakes submitted to us so far, thanks for taking part!
