西洋菜萝卜排骨汤 Watercress, Carrot and Pork Rib Soup

这几天吃东西时一直咬到舌头,猜想我应该是发热气了吧。
所以,今天就煮个西洋菜汤,下一下火。
由于没有煮过西洋菜汤,我不懂得拿捏分量,所以在菜市买西洋菜时,我只拿一小撮。
谁知道,在我身旁的安娣,真的很狠!
看着她一大把一大把地拿,吓死我了。
呵呵。。
所以,最后,我也拿了一大把。

幸好那位安娣狠狠地拿,要不然,以我原本拿的那一小撮西洋菜,真不知道够煮给谁喝。
嘻嘻~

之前听我娘说过,煮西洋菜汤时,一定要待水滚了,才可以将西洋菜下锅。
要不然,煮出来的汤就会带苦味了。
今天第一次煮西洋菜汤,跟着我娘的小撇步,成品出来好好喝!
加了蜜枣,红枣和红萝卜,让煮出来的西洋菜汤喝起来带一丝甜味儿。

材料(3人份):
西洋菜                约200g
排骨                    约200g
萝卜                    1根
蜜枣                    2颗
红枣                    5颗(去核)
盐                        适量
水                        适量
枸杞                    少许

做法:
  1. 排骨汆烫后,洗净备用;萝卜去皮后,切成滚刀状备用。
  2. 西洋菜洗净后,折成小段后,浸在淡盐水中约10分钟。
  3. 在熄火再煮锅的内锅注入清水,再把排骨,萝卜,蜜枣和红枣放入水中,以大火煮滚后,加入西洋菜,继续煮至滚。
  4. 将内锅关入外锅,让其继续煮约2小时。
  5. 最后,加入枸杞煮约10分钟,再加入盐调味即可。

Ingredients(3 servings):
Watercress            Approx. 200g
Pork ribs               Approx. 200g
Carrot                    1 nos
Sweet dates           2 nos
Red dates              5 nos (De-seeded)
Salt                         Add to taste
Water                    Some
Goji berries           Some

Method:
  1. Blanch the pork ribs, rinse and set aside; remove the skin of carrot, cut it into chunks and set aside.
  2. Rinse the watercress, snap them into smaller sections and soak them in slightly salted water for approx. 10 minutes.
  3. Pour some water into the inner pot of a thermal cooker, then, put pork ribs, carrot chunks, sweet dates and red dates into the water. Boil them over high heat til the water comes into boiling. Then, add in watercress and continue to cook til boiling.
  4. Put the inner pot into the insulating pot, close the lid and let it cook for approx. 2 hours.
  5. Lastly, add in the goji berries and cook for another 10 minutes. Then, add some salt to taste. Ready to serve.
