香菇肉燥饭 Shiitake Mushroom Braised Minced Meat



分量: 2人份


材料:
小红葱- 2粒
香菇- 5朵
猪绞肉- 150g
水煮蛋- 2个
清水- 适量

腌料:
酱油- 1 汤匙
玉米淀粉- 1 汤匙
白胡椒粉- 1/8 茶匙

调味料:
酱油- 2 汤匙
黑酱油- 1 茶匙
五香粉- 1 茶匙
花雕酒- 1 汤匙
白糖- 1/2 汤匙
白胡椒粉- 适量
盐- 适量

做法:
1) 猪绞肉用腌料腌制至少15分钟。
2) 冷油下锅,将小红葱慢火炸至金黄色后取出备用。
3) 锅内留适量的油,倒入香菇丁炒香后,加入猪绞肉炒至变色。
4) 倒入清水略略盖过香菇和肉碎后,加入炸葱和调味料混合均匀。
5) 加入剥了壳的水煮蛋,不时搅拌一下,加盖继续慢火煮约20分钟即可。

Ingredients:
Shallots- 2 nos
Shiitake mushrooms- 5 nos
Minced meat- 150g
Hard-boiled egg- 2 nos
Water- Enough to cover the ingredients

Marinate:
Light soy sauce- 1 Tbsp
Corn starch- 1 Tbsp
White pepper powder- 1/8 tsp

Seasonings:
Light soy sauce- 2 T
Dark soy sauce- 1 tsp
Five spice powder- 1 tsp
Cooking wine/ Hua Diao wine- 1 Tbsp
Sugar- 1/2
White pepper powder- Add to taste
Salt- Add to taste

Method:
1) Marinate minced meat for at least 15 min.
2) Pour some oil into an unheated wok, fry chopped shallots over low heat until it started to turn golden brown.
3) Remove the fried shallots. Keep some shallot oil in the wok, stir-fry the shiitake mushrooms, followed by minced meat.
4) Once the minced meat has turned to white, pour in water just enough to cover the ingredients. Add in fried shallot and seasonings. Stir well.
5) Add in peeled hard-boiled eggs, stir well, cover with lid and let it simmer for approx. 20min over low heat. Ready to serve.
