蚝油生菜 Oyster Sauce Lettuce


为了要清掉冰箱还剩下的生菜而煮的这道我最拿手的油菜。。*蚝油生菜*

由于调味料的多少得看生菜的分量,所以准确的分量我就不写了。。自行调味吧 ~

材料:
生菜
小葱头
蚝油




做法:
  1. 生菜洗净后,加入一锅已烧热并加了少许油的水里,烫几分钟即可取出备用。
  2. 小葱头去皮,洗净后切碎。
  3. 爆香葱头,加入适量的蚝油,糖和水。
  4. 将酱汁淋在生菜上即可。
Ingredients:
Lettuce
Shallots
Oyster sauce
Sugar
Water
Oil

Method:
  1. Place the rinsed lettuce into a pot of boiling water with some oil, blanch it and put it on a plate.
  2. Remove the skin of shallots, rinse and dice them.
  3. Saute the shallots, add in some oyster sauce, sugar and water.
  4. Pour the sauce over the lettuce. Serve.

简易鸡饭 Easy Way Chicken Rice


材料(1人份):
米                          2/3杯
水                          盖过米约半寸
蒜米                      1tbsp
白兰他菜油          2tsp
盐                          一小撮

鸡腿                     1只
姜丝                     2tsp
蒜米                     2tsp
麻油                     1tsp
盐                         1/2 tsp

做法:

  1. 鸡腿洗净沥干后,在肉比较厚的部位划两刀,用姜丝,蒜米,麻油和盐抹一抹,放置约15分钟。
  2. 米洗净后,加入水,蒜米,白兰他菜油和盐,按下电饭锅电挚开始煮。
  3. 当米煮至半熟(水收干一半)时,打开锅盖,将鸡腿和腌料铺在上面,继续煮至电饭锅电挚跳起。
  4. 当电挚跳起后,让饭和鸡肉继续焖约15分钟,过后将鸡腿取出,鸡饭盛盘即可。
备注:
  1. 如果要比较健康,可以不要放白兰他菜油,但是煮出来的鸡饭会没那么香。要不,也可用班兰叶增添鸡饭的香气。
  2. 鸡肉在米煮至半熟才放,是为了避免鸡肉因为煮得太久而变得干,硬。

Ingredients (One serving):
Rice                             2/3 cup
Water                          Enough to cover the rice for approximately half inch
Chopped garlic            1 tbsp
Planta margarine        2tsp
Salt                              Pinch

Chicken drumstick       1 pc
Shredded ginger           2 tsp
Chopped garlic             2 tsp
Sesame oil                     1 tsp
Salt                                1/2 tsp

Method:
  1. After rinsing and tap dry the chicken drumstick, make a few slashes on it. Rub the drumstick with shredded ginger, chopped garlic, sesame oil and salt. Set aside for around 15 minutes.
  2. Place the washed rice into a rice cooker, add in water, chopped garlic, margarine and salt, start to cook.
  3. As soon as the rice is half cooked (half of the water left), place the drumstick together with the marinades on the rice. Then, cover the lid and continue to cook until the rice is fully cooked.
  4. When the rice is cooked, keep the lid closed for another 15 minutes. Remove the drumstick and scoop the rice on a plate. Serve.
备注:
  1. Due to health consideration, we may omit the usage of margarine. However, the rice will not be that fragrant. Otherwise, we may use some pandan leaves to make scented rice.
  2. Drumstick is added only when the rice is half-cooked because this is to prevent it from becoming over-cooked in which the texture will be tough and dry.

白果腐竹薏米糖水 Barley and Dried Beancurd Dessert with Ginkgo Nuts

白果腐竹薏米是一道非常经典的广式甜品,也是我最爱的糖水之一。我非常喜欢喝带有浓浓豆浆味的腐竹薏米,而且还要趁着糖水还非常烫的时候喝,感觉超好!

记得在大学时期,每当煮这一道糖水的时候,我都会千求万求希望腐竹会化掉,因为曾经试过在超市买了腐竹回来但却煮不溶,搞得我还蛮失望地说。。于是,上网谷歌了很多次,有人说腐竹在煮之前,先浸泡一下,就会比较容易化了;也有人说千万不可浸泡,否则腐竹会煮不溶。。其实,在煮了那么多次的腐竹薏米糖水之后,我发觉,只要买对了腐竹,不管浸泡与否,都一定会溶化啦!

腐竹分成两种,一种是咸的,一种是甜的。咸的,是炒菜,做斋菜或煮肉骨茶用的;甜的,则是煮糖水用的。只要在买的时候,告诉老板说是要煮糖水用的,老板都应该知道得给你什么样的腐竹。除非。。。你遇到的老板是我娘亲所遇到的糊涂老板!话说有一天我娘亲去买咸腐竹想要回家包斋菜,她还告诉老板说她要拿来煮斋菜用的,不要会化掉的。我还听见老板说知道。结果,我娘亲在炒斋菜炒了没多久,腐竹就开始化掉了,气得我娘亲半命!还立刻叫我马上去另一家店再买对的腐竹回家。我娘亲很少会发火的,当我看到我娘亲气得不能出声,我就知道那老板实在是有够‘大整蛊’的。。呵呵。。

材料(3-4人份):
白果              15颗
腐竹              1片
薏米              1/2碗(或更多)
冰糖              适量
水                  1.5公升

做法:
  1. 煮开锅里的水后,加入已洗净的薏米,以中火煮约20分钟。
  2. 白果去壳,去皮,去芯,洗净后加入锅里和薏米同煮。
  3. 腐竹洗净后撕成小片,用水浸约5分钟至稍微变软后,加入锅里。
  4. 当腐竹完全溶化后,加入适量的冰糖调味即可。
Ingredients (3-4 Servings):
Ginkgo Nut          15 pcs
Dried Beancurd   1 sheet
Barley                  1/2 bowl (or more)
Rock Sugar          Add to taste
Water                  1.5 litre

Method:



  1. Bring the pot of water to boil, add in rinsed barley, cook for approximately 20 minutes with medium heat.
  2. Remove the shell, skin and core of ginkgo nuts, rinse them and add into the water.
  3. Tear the rinsed dried beancurd into smaller pieces, soak them in water for around 5 minutes or until softened. Then, add into the pot.
  4. When the dried beancurd has fully dissolved, add some rock sugar to taste and serve.

马铃薯沙拉 Potato Salad


材料(2-3人份):
马铃薯        3个
萝卜            1/2条
鸡蛋            1颗
沙律酱        适量

做法:
  1. 将马铃薯和萝卜洗净,放入一锅水中煮至筷子可以轻易地插入马铃薯中。
  2. 熄火,将马铃薯和萝卜浸入冷水中,去皮,切丁。
  3. 鸡蛋煮约7分钟,取出,剥壳后用叉子将水煮蛋弄碎。
  4. 把马铃薯和萝卜丁加入鸡蛋碎后,加入适量的沙律酱后混合均匀。
  5. 放入冰箱冷藏约3个小时后,即可食用。
Ingredients (2-3 Servings):
Potato                           3 nos
Carrot                           1/2 pc
Egg                               1 nos
Salad Dressing             Add to taste

Method:


  1. Rinse potatoes and carrot, boil them until a chopstick can easily insert into the center of the potato.
  2. Turn off the heat, soak the potatoes and carrot in cold water. Remove the skin of potatoes and carrot, then, cut them into pieces.
  3. Boil the egg for approximately 7 minutes and smash the hard-boiled egg with a fork.
  4. Mix the potatoes and carrot with the egg, add some salad dressing and mix thoroughly.
  5. Refrigerate for about 3 hours before serving.
当筷子能轻易地插入马铃薯中,就可以熄火了。。

用马铃薯沙拉包了两个‘枕头包’。。

蛋花马蹄糖水 Water Chestnut Dessert

那天在超市买了一袋马蹄想要做马蹄露,但是竟然忘了买玉米粉来勾芡。还好,勾不勾芡的马蹄糖水都一样地好喝!每一口都是脆脆的马蹄,糖水还带着一丝蛋香。。喝着喝着,还觉得有点像在喝燕窝呢~呵呵。。

这款糖水真的是一道即简单,又快捷,又好喝的甜品。。最适合一直说不会下厨的人。。因为,材料准备步骤不复杂,又不需要煮很久,所以只有不想煮的人,没有不会煮的人。。

材料(3-4人份):
马蹄       约20颗
鸡蛋       1颗
冰糖       适量
水           5杯

做法:
  1. 马蹄去皮后,刨丝或切丁备用。
  2. 水煮沸后加入冰糖,煮至完全溶解。
  3. 放入马蹄,再煮至滚。
  4. 熄火,慢慢加入已经打散的鸡蛋,一边加,一边快速地搅拌成蛋花。
  5. 再开火,煮至滚,即可。
备注:
  1. 在加入鸡蛋时,一定要一点一点地加,并用汤匙快速地搅拌,这样才能够倒出一丝一丝,滑滑的蛋花,而不是蛋块。
  2. 也可加入马蹄粉或玉米粉勾芡。 
  3. 此款糖水不管热喝或冰过再喝,都好喝。
Ingredients (3-4 servings):
Water chestnut    20 pcs
Egg                       1 nos
Rock sugar           Add to taste
Water                   5 cups

Method:
  1. Remove the skin of water chestnuts, then, shred them or cut them into small cubes.
  2. Add rock sugar into boiling water and stir until it is fully dissolved.
  3. Put the shredded water chestnuts into the boiling water and cook until it boils again.
  4. Turn off the heat, add in the beaten egg and stir quickly.
  5. Cook the dessert again until boiling. Ready to serve.
Remarks:
  1. Must add the egg slowly but stir it rapidly.
  2. Can add some water chestnut flour or corn flour to thicken the dessert.
  3. This dessert can be served hot or chilled.
看吧!所需的材料就只有这几样。。

鸡肉卷饼 Chicken Brekkie Wrap


话说有一天,我两个姐姐都不异而同地买了面皮来包XX卷,说很好吃!搞得我也蠢蠢欲动,跑到家里附近的Tesco看看有没有卖她们口中的面皮。。结果,很失望地,Tesco竟然没有卖。。

隔了几天,实在忍不住了。。抓了车钥匙,就自己一个人跑到皇后湾广场的Aeon里找,因为看到部落格友写说在那里可以找得到,而姐姐也是在Aeon那里买的。。果然,皇天不负有心人,终于给我找到了!自己想先试原味的但听说马铃薯口味的也不错,于是,在纠结着不知道该买什么口味的时候,就买了两种口味的回家慢慢试~

材料(2人份):
面皮--2片
鸡肉片--4片
鸡蛋--2颗
生菜--适量
番茄--适量
沙律酱--适量
胡椒粉--适量

腌料(6片鸡肉):
HP酱--2 tbsp
蚝油--1 tbsp
黑胡椒碎--1/2 tbsp
糖--1/2 tbsp
蒜米--1 tbsp
  1. 将所有腌料和鸡肉片混合一起,放入冰箱腌至少两个小时或隔夜。
这个就是HP酱。。在超市或烘焙材料店都可以找得到。。
做法:
  1. 将生菜和番茄洗净切片备用。
  2. 鸡蛋加入适量的胡椒粉,炒至半熟,盛起备用。
  3. 将已经腌隔夜的鸡肉片放入平底锅,以中火煎至熟后切成小块备用。
  4. 取出一片面皮,放在干净的平底锅上,小火弄热约30秒后翻面,一样弄热30秒。
  5. 在面皮中间涂上沙律酱,排上所有材料后,卷起,切半,即可趁热享用。
备注:
不可以太贪心放太多材料在面皮上,否则面皮很难卷上。
这个面皮在Aeon可以找得到。。
用了另一种卷法做了一份给屋友。。
Ingredients (2 servings):
Tortilla wrap--2 sheets
Chicken slice--4 slices
Egg--2 nos
Lettuce--Own preference
Tomato-- Own preference
Salad Dressing--Own preference
Pepper powder--Add to taste

Marinade (For 6 chicken slices):
HP sauce--2 tbsp
Oyster sauce--1 tbsp
Ground black pepper--1/2 tbsp
Sugar--1/2 tbsp
Minced garlic--1 tbsp
  1. Mix all the ingredients together with chicken slices, keep it in refrigerator for at least 2 hours or overnight.
Method:
  1. Rinse lettuce and tomatoes thoroughly and slice them.
  2. Add some pepper powder into the egg and scramble the egg.
  3. Pan-fry the marinated chicken slices on a medium-heat pan. Then, cut them into pieces.
  4. Heat a sheet of tortilla on a clean frying pan for about 30 seconds on both surfaces.
  5. Spread some salad dressing on the tortilla and then arrange all the ingredients at the middle, roll it up, cut it diagonally and serve it warm.
Remark:
Do not place too much ingredients on the tortilla. Otherwise, it would be difficult to roll it in shape.

牛蒡汤 Burdock Root Soup


很久以前就听过牛蒡这个植物,但是一直都没看过。。直到上个星期跟朋友聚餐时,朋友谈起牛蒡汤时,才想到在槟城Tesco Extra有卖。。于是,就买齐材料(其实也不算买齐啦,就欠个白萝卜叶),来个冒牌五行汤!

材料(3-4人份):
牛蒡                       1根
红萝卜                   2根
白萝卜(连叶)        半根(我买的太大根了)
香菇                       6朵
鸡肉(连骨)            2块
水                          5碗
盐                          适量

做法:
  1. 将香菇用温水泡发,切半去蒂备用。
  2. 红萝卜和白萝卜去皮,洗净后切块备用。
  3. 将牛蒡洗干净后,把表皮略刮干净,切片备用。
  4. 鸡肉用沸水汆烫后,取出洗净,加入另一煲水中。
  5. 把其他材料加入水中,以大火煮至水滚后转小火,煮3小时。
  6. 最后,用适量的盐调味。
这款汤材料充足,所以我只放少许盐调味就已经很够味了。

Ingredients (3-4 servings):
Burdock root                1 pc
Carrot                           2 pcs
Radish with its leaves   1/2 pc (mine is very big in size)
Dried mushroom          6 pcs
Chicken with bones       2 pcs
Water                           5 bowls
Salt                               Add to taste

Method:
  1. Soak the dried mushrooms in warm water until they double in size, then, remove the stalks and cut them into half.
  2. Remove the skin of carrot and radish, cut them into chunks after rinsing.
  3. After rinsing the burdock root, cut it into slices after cleaning the skin.
  4. Boil the chicken in boiling water for about a minute, rinse it, then add into another pot of water.
  5. Add the other ingredients into the pot of water, boil it with high heat then cook for another 3 hours with low heat.
  6. Add some salt to taste.

苹果雪耳糖水 Apple-Snow Fungus Sweet Soup



第一次喝这道糖水,是在大学时期,室友诗韵煮给我喝的。那时候,才知道原来苹果也可以用来煮糖水。在离开家乡到外地求学的期间,偶尔的一碗糖水,真的让我觉得很幸福!况且,这碗苹果雪耳糖水,真的很滋润。。每一口不但有浓浓家的感觉,还有满满爱的力量~

材料(4-5人份):
苹果      2个
雪耳      3朵
红枣      4颗 (大颗)
水          5碗
冰糖      适量

做法:
  1. 将雪耳洗净,用温水泡发后撕成小片(底部硬的部分不要)。
  2. 将红枣洗净,去核,剪成小片。
  3. 苹果去皮,去芯,切块。
  4. 把全部材料加入锅中的水里,以大火煮30分钟。
  5. 熄火,焖15分钟,再以小火煮20分钟或至雪耳变软。
  6. 加入适量的冰糖调味即可。
备注:
煮的时间越长,雪耳就会呈较jelly状的口感。反之,则带爽脆的口感。

Ingredients (4-5 Servings):
Apple                   2
Snow fungus       3 pcs
Red dates            4 pcs (large)
Water                  5 bowls
Rock sugar          Add to taste

Method:
  1. After rinsing the snow fungus, soak them in warm water until they become soft, then tear them into smaller pieces (remove the bottom part that is hard).
  2. Deseed the rinsed red dates and cut them into smaller pieces.
  3. Peel and core the apples, then cut them into chunks.
  4. Place all the ingredients into a pot of water, boil for 30 minutes.
  5. Turn off the heat and leave it for 15 minutes, then simmer for another 20 minutes or until the snow fungus have softened.
  6. Add some rock sugar to taste.
Remarks:
The longer the cooking time, the more the snow fungus will turn to be jelly-like texture. Otherwise, the snow fungus will have crunchy texture.

酸柑薏米水 Lime Barley Drink



材料(1至2人份):
酸柑汁    1tbsp
薏米        5 tbsp
水            2 杯
冰糖        适量

做法:
  1. 将薏米洗净。
  2. 锅里倒入水和薏米,大火煮20分钟。
  3. 转小火,煮约半小时或至薏米变软,即可加入适量的冰糖调味。
  4. 继续煮至冰糖完全熔化,熄火。
  5. 酸柑洗净,切半,取汁,丢掉酸柑籽。
  6. 将薏米水倒入酸柑汁中,搅拌均匀,即可。
备注:
此饮料冷饮或热饮均可。

Ingredients (1-2 servings):
Lime juice      1tbsp
Barley            5 tbsp
Water            2 cups
Rock sugar    Add to taste

Method:
  1. Rinse the barley.
  2. Pour water and barley into a pot, boil it for 20 minutes.
  3. Lower the heat and simmer for another half an hour or until the barley has softened. Add some rock sugar to taste.
  4. Continue to simmer until the rock sugar has completely dissolved.
  5. Rinse the lime, cut it into half, squeeze to get its juice and remove its seeds.
  6. Pour the barley drink into lime juice, stir well and serve.
Remarks:
This drink can be served chilled or warm.
