这一道菜,是其中一道有着我大学回忆的一道菜。
在大学时期,除了常煮的糖水之外,当我煮好咖喱时,也会呼朋唤友地,一人分一些地回各自的房间吃。
朋友们都说我很厉害,连咖喱也会煮,也有的说我将会是一位贤妻良母。
但,我每一次都告诉她们说,我一点都不厉害,厉害的是市售的即煮咖喱酱料包。
只要买一包酱料包回来,管你是十指不沾阳春水的千金大小姐还是好吃懒做的大懒虫,统统都可以变身成为贤妻良母或贤夫良父!
真谢谢发明这种方便酱料包的人,让我们不管身在何处都可以随时满足自己的味蕾!
今天煮的杂菜咖喱,从准备功夫到盛盘,前前后后只用了约1个小时的时间。
做法非常简单,成品却又非常美味。
我煮了一锅,和我的屋友一起分享。
她说如果我以后失业,我可以去应征做厨师。
呵呵。。看。。又有人上当了。。我又得解释了。。哈哈。。
她还说晚上她会出去打包白饭回来,再吃我煮的咖喱。。呵呵。。
(小插曲:饭煮到一半,饭锅坏了。。还好还可以用瓦斯炉继续煮,午餐才有白饭吃。。)
虽说饭锅坏得不是时候,但雨却来得正是时候!
今天煮咖喱,天就下起雨来了!
冷冷的天,一碗热腾腾的白饭,配上热辣辣的咖喱,可谓人生一大享受。
材料(4人份):
即煮蔬菜咖喱酱料包 1包(我用Delimas牌)
长豆 切成2寸长
茄子 切成条状
羊角豆/秋葵 切成2寸长
马铃薯 切成滚刀状
包菜 切成小片
大洋葱 切成8份
蒜头 4瓣切碎
咖喱叶 1小棵
牛奶 3tbsp(可用椰浆代替)
做法:
- 将所有材料准备好。
- 热锅,下油,将长豆和茄子稍微煎至软,取出备用。
- 热锅,下油,将羊角豆稍微煎至软,取出备用。
- 热锅,下油,稍微煎一煎马铃薯,取出备用。
- 利用煎马铃薯剩下的油爆香洋葱和蒜茸后加入咖喱料和咖喱叶炒至香。
- 加入适量的水,煮滚,加入所有材料(除了牛奶),以中火煮约半个小时。
- 加入牛奶,搅拌均匀。
- 最后,加入盐调味即可。
我喜欢吃比较软的蔬菜,所以我煮半个小时;如果想要不要那么软的话,请自行缩短烹煮时间。
Ingredients(4 servings):
Vegetarian Curry Paste 1 pack (I used 'Delima' brand)
Long bean Cut into 2" in length
Brinjal/ Eggplant Cut into strips
Lady's finger/ Okra Cut into 2" in length
Potato Cut into chunks
Cabbage Cut into small pieces
Onion Cut into 8 portions
Garlic 4 cloves (Cut roughly)
Curry leaves 1 stalk
Milk 3tbsp(Can be replaced by coconut milk)
Salt Add to taste
Method:

Method:
- Get ready all the ingredients.
- Heat oil in a pot, stir-fry long beans and brinjals until they are slightly softened. Remove from pot and set aside.
- Heat oil in a pot, stir-fry lady's fingers until they are slightly softened. Remove from pot and set aside.
- Heat oil in a pot, stir-fry potatoes. Remove from pot and set aside.
- By using the remaining oil, saute the onion and garlic, followed by curry paste and curry leaves.
- Add an appropriate amount of water into the pot, bring it to boil, add in all the other ingredients (except milk), cook over medium heat for approximately half an hour.
- Add in milk and stir well.
- Lastly, add some salt to taste. Ready to serve.
Note:
I prefer to have vegetables with soft texture, so I cooked it for half an hour. If a harder texture is preferred, please shorten the cooking time.
